The Catarina chile has other names such as Chile Cora and Ladybug chile. They are shaped like little eggs and are very similar to the Cascabel pepper also from Mexico. Both are mainly used dried and both when dried can be shaken and make a sound like a rattle. The Catarina chile is from Central Mexico and grown in the state of Nayarit. It has medium heat with fruity and earthy smoky flavor tones. They ripen from green to reddish brown. They are mainly used as a seasoning powder or rub for meats like beef and lamb. But many consider them like Cascabel as an all purpose chile powder that can be used in sauces, soups and stews. The Chile Catarina plants grow 3 to 4 feet tall.

Growing Tips

Start indoors in 80 degree temp about 1/4” deep 6-8 weeks before the last frost. Transplant well after danger of frost and ideally when night temps don’t go lower than 50F. Sow plants 24-36” apart. Plant in full sun. Do not need to stake plants. Fertilize with fish emulsion or a soluble, complete fertilizer.
