(60 days) Verde tomatillos are easy to grow and produce an abundance of 2-3” fruits. Plants should be trellised like tomatoes. Fruits keep for several weeks in the husk at room temperature, or prepared sauce can be frozen for later use. Classic green tomatillo with tart flavor, traditionally used as the main ingredient in salsa verde (green salsa). For a simple salsa verde, roast on high for about 30-40 minutes or until they char slightly. Combine in a blender or food processor with hot peppers, onion, cilantro, salt and lime juice to taste.
Start indoors about 1/4” deep 6 weeks before the last frost. Transplant well after danger of frost and ideally when night temps don’t go lower than 50F. Plants grow two to three feet tall and should be planted 12-18 inches apart. Need full sun. Must be picked regularly when they fill husk.
