This absolutely stunning blood-red dent heirloom corn contains a rich oily germ. Jimmy Red is prized for it's sweet flavor. It much higher in brix (sugar) than other red dent varieties like 'Bloody butcher'. Widely used by chefs for its aromatic and sweet red-flecked grits and cornbread. It has also been one of the most popular corn varieties in the country for moonshine whiskey. Although the variety nearly went extinct in early 2000, with only two remaining ears left to revive the variety, we obtained seed from 'Railey Farm and Field' in 2017 and have been selecting to shorten it's season to grow in our climate with grower Andy Hayner from Lost Farm. The corn grows over 10 feet tall and ears are massive! You can also eat in the 'milk' or sweet corn stage by grilling or boiling. We love this corn!
This variety is in the Slow Food Ark of Taste.
Growing Tips
Sow in tilled soil 8 inches apart in 24-30 inch rows. Plant after danger of frost in spring. Harvest after husks have dried down if intending to make corn meal or grits. Can also harvest in the milk stage (sweet corn stage) for grilling and boiling similar to sweet corn. Corn is a heavy feeder on soil nutrients. Plant beans before your corn as beans will 'fix' nitrogen from the atmosphere to the soil. Add a natural source of nitrogen, and composted manure as needed.
