This blue corn population is made up of a mix of both North American and Mexican varieties selected for texture and original flavor for tortilla making. Some of the blue corn seed was gifted from the Oaxaca, Mexico from the Amaranth Collective. We are working with Sin Fronteras in Minneapolis, MN who produce and selling tortillas. We received funding from the action learning seed fund to help adapt the Mexican blue corn seed to our northern climate and support Latinx farms and markets in our region.
